Cooking with Wild Berries in Southern Scotland

When it comes to native Scottish berries it has been a great autumn (fall for our American guests) with a profusion of redcurrants and brambles (blackberries) throughout the countryside. Restaurants and hotels in Southern Scotland enjoy showcasing their local riches and this blog’s resident cook, Susan Crosthwaite has been hard at work in the kitchen using the berries in her evening meals. While recent guests were catching a salmon on the River Stinchar, Sue created a menu of Ballantrae prawns, Marrbury smoked salmon, Cralloch lamb with redcurrants and home-made rowan jelly and to finish, apple and bramble crumble.
